Non-Alcoholic Mocktail Recipes (Mexican Themed)
These are great alternatives to the normal syrups that come as standard.
These recipes will definitely hot up your summer party.
Be venturous and experiment. Prepare well in advance.
Tequila Sunrise
- Orange and pineapple slush syrup
- Fresh limes or cordial
- Blackcurrant cordial
- Lime(s)
Mix 1 part orange syrup, 1 part pineapple syrup, 12 parts water. Add to taste lime juice or cordial.
Pour mixture into machine hopper(s), set machine to freeze, leave for at least 1 hour until frozen slush consistency is achieved.
Pour a small amount of blackcurrant cordial into a 10oz (slim jim) glass.
Fill glass with slush mixture. Decorate with slice of lime.
Perfect for a summer party with it’s vibrant colours!
Strawberry Margarita
- Strawberry and Pineapple Slush syrup
- Fresh strawberries (400 - 500 grams)
- Fresh lime(s) and or cordial
- Granulated sugar on a saucer
Mix 1 part strawberry syrup, 1 part pineapple syrup, 12 parts water. Add to taste lime juice or cordial. Put a side 10 good sized strawberries. Cut the rest of the strawberries in to pieces and add to mixture. Pour mixture into machine hopper(s), set machine to freeze, leave for at least 1 hour until frozen slush consistency is achieved.
Slice in half the remaining strawberries. Slice a lime into wedges. Rub a wedge of lime around the rim of a cocktail glass and then dip the rim in to the sugar. Fill cocktail glass with slush mixture and garnish glass with a strawberry half.
As an alternative to strawberries, use raspberries, blueberries, even cherries.
A fruity take on the classic Margarita!
Lime Liquado
- Base slush syrup
- Lime concentrate or cordial
- Carbonated water (1 litre)
- Fresh unwaxed lime x 12
- 1 Kg of caster sugar.
- Fresh mint leaves (bunch)
Using a potato peeler, peel the zest from 10 of the limes, leaving as much of the white outer skin as you can. Squeeze the juice from the limes into jug. Mix 1 part base syrup, cup of lime concentrate, the squeezed lime juice and the zest with 6 parts water. Pour mixture into machine hopper(s), set machine to freeze, leave for at least 1 hour until frozen slush consistency is achieved.
Strip mint leaves from stem and slice the limes.
Using a 10oz glass, pour 30cm of carbonated water in to glass, add a few mint leaves, top glass up with slush mixture and garnish with a slice of lime.
To Sweeten add a spoon of sugar (or more to individual’s taste) and stir.
As an alternative try making Lemon Liquado; by using lemons instead.
Or use half lemons, half limes for a zesty citrus.

Mexican Chilli Mojito
- Lemon and lime slush syrup
- Red (hot) chillies, at least 14
- Fresh unwaxed lime x 7
- Fresh mint (bunches x 2)
- 200 grs of cane sugar
- Bottle of hot chillie sauce
Wash and strip the leaves from the stems of the mint, place half of the mint leaves to the side and finely chop the other half of the mint leaves up.
Wash and clean the chillies, chop 4 of the chillies into fine strips and set aside. Finely chop the remaining 10 chillies.
Using a pestle and mortar (or end of rolling pin and bowl), crush the chillies, chopped mint leaves, the juice of 6 limes and the cane sugar, Keep mashing until the sugar dissolves and the chillies and mint leaves release their flavours.
Mix 1 part lemon and lime slush syrup, to 6 parts of water. Add the crushed chilli mixture and a good squeeze of the chillie sauce (an egg cup).
Pour mixture into machine hopper(s), set machine to freeze, leave for at least 1 hour until frozen slush consistency is achieved.
Pour 20cm of carbonated water into a 10oz glass, add a few leaves of mint and a couple of chilli strips! Fill glass to top with slush mixture, stir and serve.
